Summer cold, when you have been looking forward to warm days all winter. Put an end to any budding summer cold with this easy and refreshing herbal tea cocktail.
20g/10 tea bags of Empa-Tea (a lot? believe me you will be glad of it)
Zest of 2 lemons
4 tablespoons of grated fresh ginger, use the skin as well
3 tablespoon of caster sugar
1 tablespoon pink peppercorn, crushed
1 liter of freshly drawn filtered boiling water
In a tall heat proof jug, spoon in/put in the Empa-Tea leaves/tea bags, zest of lemons, grated ginger, sugar and crushed pink peppercorn and pour in the boiling water.
Stir until the sugar is dissolved. Cover and leave to cool to room temperature.
Once cool, strain and refrigerate.
Sever with lots and lots ice, thin slice of fresh ginger and mint springs
