Somewhat like a chai but so much more rich and without the milk.
Small piece of fresh ginger, chopped
3 lemongrass sticks, trim the top and bottom, pierced
3 lime limes, crushed
2 pandan leaves, bruised
1/2 stick of Ceylon cinnamon
3 pods of cardamon
a pinch of grated nutmeg
dark palm sugar to sweeten
Place all the ingredients into a pan with 750ml of filtered water and bring to the boil. Simmer for 10 minutes.
Remove from the heat and leave to cool before straining, pour into bottles and chill. You can have it hot as well.
