Tamarind, Turmeric, Lemon Balm

Herbal Tea/Infusion

This has all five tastes in one drink AND you can have it hot or cold.

Ingredients

2 tablespoon tamarind paste (if you find the sweet version, use that)

100g fresh turmeric, chopped

2 lime leaves

50g of lemon balm

50g dark palm sugar

Dark palm sugar to sweet your tamarind, turmeric, lime and lemon balm herbal tea. Served hot or cold. Winter warmer and a summer cooler.

Method

Place all the ingredients in a pan with 750ml of filtered water, cover and gently bring to the boil and simmer for 10 minutes.

NB – Tamarind is sour, depending on the variety you have, add a tiny pinch of salt or add a lemon/lime peel when you simmer the herbal tea.

Remove from the heat, strain and drink hot or leave to cool. Decant into a bottle, chill and enjoy later.
