The beauty of this is that you can have it with or without alcohol. Sip it with nibbles or as a palate cleanser.
Juice of 6 clementines, and the zest
Juice of 2 limes, and the the zest
1 tablespoon of pink peppercorn, crushed
2 small stems of rosemary
3/4 teaspoons of Empa-Tea
400ml of filtered water
200g of sugar
Place the clementine and lime juices and zest into a bowl with the rosemary stems
Put the rest of the ingredients in a pan and simmer gently for 10 minutes.
Pour this into the bowl with the juices and zest. Leave to cool and strain.
Pour into a jug and refrigerate overnight or for 10 hours.
Tea Cocktail Suggestions:
- You can have it as it is or with a measure of sparkling water like @DoubleDutch
- With your favourite bubbles; Cava or Champagne
- Or as a mixer for any of your rum based cocktails
