Rhubarb and Rooibos Tea Cocktail and Sparkling Quince Tea

Rhubarb and Rooibos Cocktail


1kg of red rhubarb, cut into batons

500g of granulated sugar

15/20g of organic rooibos

2 limes, peels and juice

1 liter of filtered water


Place all the rhubarb batons, sugar, rooibos, lime peel and juice and splash in the water into a large enough container.  Stir until the sugar has dissolved and allow to steep for 4-5 days.

Strain the cordial using the muslin cloth and bottle the rhubarb and rooibos cordial into sterilised bottles.  Can be stored in the fridge for a month.

Serving suggestions.
