Generations of Sri Lankans chop, cut and sprinkle fresh turmeric and ginger for its many healing and health properties. Use the fresh stuff, its lighter and a fantastic way to start your day.
100g turmeric root
50g fresh ginger
1 lime, juice
2 tablespoon of honey
Zest of 1 lime
Wash, chop (keep the skin on) and blitz the turmeric and ginger roots in a blender with some water. When smooth, spoon into a pan with 750ml of water.
Bring to the boil gently and then simmer for 10 minutes. Remove from the heat and add the lime juice.
When the herbal tea is still warm, strain through a fine sieve or muslin cloth to extract all the goodness.
Sweeten with honey and cool. Decant into a bottle and chill before serving with fresh lime zest as a garnish
